1. Make the Cheesecake Filling
In a medium mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries. Set aside.
2. Assemble the Sandwiches
Spread a generous amount of the strawberry cheesecake filling onto four slices of bread, leaving a small border around the edges. Top with the remaining bread slices and press lightly to seal.
3. Dip the Sandwiches
In a shallow dish, whisk together the eggs and milk. Dip each sandwich into the mixture, coating both sides thoroughly, just like French toast.
4. Fry to Golden Perfection
Heat butter in a non-stick skillet over medium heat. Once melted, place the sandwiches into the skillet and cook for 2–3 minutes on each side, or until they are golden brown and crispy.
