How to Keep Strawberries Fresh Longer

When you get back from the market or the supermarket, you’re often tempted to quickly put your strawberries in the refrigerator . This isn’t the best idea! First, take a few minutes to inspect them one by one. Like a bad apple in a basket, a single damaged strawberry can ruin the entire tray. So, discard any that are already soft, stained, or showing signs of mold.
Above all, do not wash too early: humidity is the number one enemy.
It’s tempting to wash everything at once… but that’s precisely the wrong thing to do. Water is a real mold accelerator for strawberries. Like sponges, they absorb moisture and quickly become soggy . The trick? Don’t rinse them until you’re ready to eat them.
The vinegar bath trick: surprising, but incredibly effective
For the more forward-thinking, there’s a solution: a vinegar bath. Mix 1 part white vinegar with 3 parts water , and immerse your strawberries in it for 5 to 10 minutes. This simple step eliminates mold spores. Then, dry them with a clean cloth or paper towel. It’s a bit like a mini spa treatment for your fruit.
Smart refrigeration: the right container, in the right place
The refrigerator is essential, but don’t just place your strawberries in it haphazardly. Forget sealed plastic bags that trap moisture. Instead, use a flat container lined with paper towels, with the strawberries spread out evenly. Place it in the vegetable drawer, where the temperature is stable ( around 1 to 4°C ). It’s the perfect balance to prevent condensation while keeping the fruit fresh.
Keeping the stems: a detail that changes everything

A small gesture not to be overlooked: don’t remove the stems (or calyxes) too early. They act as a small natural lid that protects the strawberry flesh from air and dehydration. You should remove them just before eating.
And for surplus? Freezing is your ally
If you’ve bought too many strawberries or they’re starting to soften , consider freezing them. Wash them, hull them, dry them, then arrange them on a baking sheet for quick freezing. Once frozen , transfer them to an airtight freezer bag . Ideal for making smoothies, coulis, or even a quick pie.
Mistakes to absolutely avoid

Leave them at room temperature : in a few hours, they become soft, even fermented.
