How to do it
1. Mix the wet ingredients
Crack the egg into a bowl and add the sugar and vanilla sugar (or vanilla extract). Beat until creamy and smooth. Add the oil and yoghurt, stirring constantly until well combined.
2. Add the dry ingredients
Sift the flour and baking powder directly into the wet mixture. Fold gently until smooth and lump-free. (If it feels too thick, add a spoonful of yogurt.)
3. Fix it
Pour the batter into a lightly greased non-stick pan.
Cover and cook over low heat for 10-15 minutes , or until golden brown and cooked through. The aroma will be incredible !
4. Serve and enjoy
Let it cool slightly, then sprinkle with powdered sugar or top with fresh berries. You can also drizzle with chocolate sauce or honey for an extra treat.
Tips for success
- Cook on low heat to avoid burning the bottom.
- Don't check too often – keeping the lid closed will help it rise evenly.
- If you want a richer flavor, use Greek yogurt or add a spoonful of lemon zest.
- You can also make mini versions in smaller molds for individual servings!
