Comforting pasta in 10 minutes: a quick and easy weeknight dinner

Instructions

Step 1: Cook the pasta

Bring a large pot of salted water to a boil. Add 225g of your chosen pasta and cook according to the package instructions until  al dente  (tender but still firm to the bite). Drain and set aside.

Time-saving tip:  prepare the sauce while the pasta is cooking to save precious minutes and serve dinner faster.

Step 2: Sauté the garlic

In a large skillet, heat  1 tablespoon of olive oil  over medium heat. Add  2 cloves of minced garlic  and stir constantly for about  1 minute  , until the garlic is fragrant. Be careful not to let it brown, as burnt garlic becomes bitter.

Step 3: Add the tomatoes and vegetables

Pour in the contents of a  400g can of chopped tomatoes  , including their juice. Mix in the garlic-infused oil. Simmer for  2 to 3 minutes  to allow the flavors to meld.

Add 250 ml (1 cup) of frozen peas or mixed vegetables directly to the pan   . Stir gently, cover, and cook for  another 3 to 4 minutes  , or until the vegetables are tender and piping hot.

Step 4: Mix the pasta and the sauce

Add the  drained pasta  to the pan containing the tomato and vegetable mixture. Gently toss until the pasta is well coated in the flavorful sauce. Season with salt  and pepper  to taste. For a spicy kick, add a pinch of  red chili flakes  .
