Instructions:
1. Cook the pasta
Bring a large pot of salted water to a boil.
Cook penne pasta according to package instructions until al dente.
Drain and set aside, reserving ½ cup of pasta water.
2. Cook the sausage
In a large skillet, heat 1 tbsp olive oil over medium heat.
Add the sausage slices and cook until browned on both sides.
Remove and set aside.
3. Sauté the vegetables
In the same skillet, add another tbsp of olive oil.
Cook onions until soft and translucent.
Stir in garlic and red bell pepper, cooking for another 2 minutes.
4. Make the sauce
Add diced tomatoes, Italian seasoning, salt, black pepper, and red pepper flakes.
Simmer for 5 minutes, stirring occasionally.
5. Combine everything
Add the sausage back to the skillet along with spinach.
Stir until spinach wilts.
Toss in the cooked penne pasta, adding a splash of pasta water if the sauce is too thick.
6. Finish & serve
Sprinkle with Parmesan cheese and toss well.
Garnish with fresh parsley.
Serve hot!
