Creamy Sausage and Spinach Penne Pasta
Ingredients:
300 g (10 oz) penne pasta
250 g (9 oz) Italian sausage (sliced into rounds)
2 tbsp olive oil
1 medium onion, thinly sliced
3 cloves garlic, minced
1 red bell pepper, sliced
2 cups fresh spinach
1 can (400 g / 14 oz) diced tomatoes
1 tsp Italian seasoning (oregano, basil, thyme)
½ tsp red pepper flakes (optional, for heat)
Salt and black pepper, to taste
½ cup grated Parmesan cheese
Fresh parsley, chopped (for garnish
